Mediterranean – Gin Mare smells herbaceous, with juniper and thyme dominating. Olives are also apparent. On the tongue is Juniper with a burst of basil, rosemary and thyme emerge as well as coriander.

England – The classic notes of juniper, angelica and coriander have been intensified, with the addition of bergamot and ambrette seeds offering extra exoticness. A rich and intense gin.

AVIATION GIN | 13.0

Served with soda and orange bitters with a slice of orange

America – Aviation Gin finishes with a floral and earthy spice note, with a very literal hint of birch beer and flamed orange peel. The finish is long and moderately warm.

WHITLEY NEIL RHUBARB AND GINGER | 12.5

England – This gin is inspired by the glory of English country gardens, the essence of rhubarb adds a tart crisp edge to the smooth English Gin base, whilst the ginger extract warms the palate for a full bodied finish.

Australia – Distilled with Native Australian Botanicals from the heart of our rainforest. Brookie’s contains 26 botanicals of which 18 are Native to our region of Northern Rivers. The first taste is citrus followed by fresh raspberries, it is quick to change to bold spice flavours from the native ginger and aniseed myrtle and an intense peppery finish.

Germany – With 47 botanicals, this one is complexed. You’ll notice the high volume of fruit and floral botanicals, but lots of spice too.

Australia – Aromatically the gin has fresh pine needles and incredible spice, and a clear peppery, dense raspberry character. The palate is lovely and sweet, with long juniper and spice character finish.

G-VINE |13.5

Served with fresh lemon, basil and soda

France – Bright aromas of cinnamon bark, dried cherry and tangerine, sandalwood, and vibrantly floral juniper follow through on a smooth, supple entry to a glycerous dry-yet-fruity medium-tofull body with lovely layers of spice, mint and lemon verbena. Finishes with a long, lilting fade with a touch of floral talc, pistachio oil, and pink peppercorns.

Ireland – Shortcross is a craft distilled gin that uses wild clover, green apples, cassia, elderflower and elderberry amongst it’s host of botanicals. On the nose there is a massive juniper hit which sits just behind an earthy (elderflower / berry?) sweetness with very pleasing floral and citrus note.

Australia – Fragrant citrus followed by fresh pine, coriander, juniper and sweet orange. Fresh lemon myrtle leads onto subtle pepper berry and citrus notes.
